Lunch to Go

Its been ages since I met a friend for lunch someplace nice. Most of my lunches are something I either heat up in the microwave and eat at my desk, or I run out to take care of errands and grab something fast from the drive through. I’m going to have to make an effort to set some lunch dates and stop neglecting my social life. There is more to the middle of the day then just lunch to go.

Lemon Meringue

Tonight I had a craving for a lemon meringue pie. My mom used to bake them from scratch – piecrust and everything. But I bought a nice ready made pie crust from the freezer section of the Food Lion and used a pack of Jello pudding mix for the lemon filling. The meringue is just egg whites and sugar – so that was easy. It turned out fantastic.

Starbucks breakfast. A big old cup of coffee and a bowl of oatmeal. Under five bucks. Fast and filling.

My cooking is in a rut. I’m sick of the same old stuff, week after week. i wish the economy was better so we could eat out at a nice restaurant once in a while. But we are pinching pennies just like everyone else, so it means eating dinner at home and that, in turn, means that I have to cook. *Sigh*

Shoneys for Turkey

I simply cannot cook a big Thanksgiving dinner after working a double shift. We are going to have to try Shoneys and hope that they do a good job with the turkey and the traditional fixings. I don’t even know what their stuffing is like. But I don’t care – I’m tired and hungry. So we are going to Shoney’s.
